Andrew and I like to try new recipes pretty often, so I'm always on the lookout. To make it easy, I keep a Food board on Pinterest with all my "want to make" recipes. Below is one of them: Pickled Beets & Eggs.
This recipe seemed so cool mainly because I've never pickled anything before. And it's quite an easy recipe to make {even though it might sound intimidating}. All that is needed are: 3-4 beets that are baked in advance and peeled {I had red, yellow, & pink beets}, 4 eggs, onion, and dill. Plus the ingredients to make the pickling liquid: apple cider, garlic, sugar, peppercorns, and salt, which all get boiled together.
After the pickling liquid cools down a bit, it gets poured on top of the eggs, beets, onions, and dill and gets refrigerated overnight.
The next day, you have a delicious snack! Tah dah!
This snack is actually very filling. And not to mention super cute and colorful!
