French Yogurt Cake

I enjoy baking complicated recipes, with lots of layers and creams, but only when I have tons of time on my hands.  I find it relaxing.  But for those busy nights when the human pack craves sweets, easy-breezy recipes are the best.  This French Yogurt Cake is a great example.  Four steps is all it takes {below} and it is ready to bake!  


Step 1: rub the sugar and the lemon zest with your hands until the sugar is moist and yellowish.


Step 2: add all wet ingredients on top of the sugar + lemon mixture and whisk. 


Step 3: add all the dry ingredients on top of the wet ingredients, and whisk again.


Step 4: place the batter into a prepared pan and bake.  Voila!


This cake is moist & creamy from the greek yogurt, and super fragrant from the lemon zest and vanilla.  It is de-lish with that morning coffee!  Happy baking!
