On Sunday morning we made a batch of apple pancakes that were super moist and tasty. The human pack has never heard of apple pancakes before, so we were very excited to try this recipe.
Pancakes and crepes are the go-to recipe when we crave something sweet because they are easy and quick to make. These pancakes are no exception. Here are the six easy steps to make them:
1. Start by peeling and grating 3 apples.
3. Add 1 1/2 cups milk + 1/4 cup sugar to the eggs and mix for a minute so the sugar starts dissolving.
4. Add the rest of the dry ingredients (2 cups flour, 1 teaspoon baking powder, pinch of salt, cinnamon, nutmeg, vanilla, and a little lemon juice) and mix until incorporated.
5. Add the apples and fold them in.
And that's it! Now it's time to cook them. I heated a little butter in my pan (healthier substitute: light olive oil or coconut oil) and dropped a small ladle full of batter in the pan that I evened out a bit by pressing down on the batter. This helped the pancake cook evenly. Once golden on one side (after about a minute or two), just flip and cook on the other side.
We sprinkled powdered sugar on top and served them with maple syrup.
Oh yeah, I forgot about this guy. Pack member Jordi helped too - he ate all the apple peels. He's such a good boy!
