Ingredients:
3 cups of flour
1/4 teaspoon dry yeast
1 1/4 teaspoon salt
1 1/2 cups of water
Step 1. Mix all dry ingredients together and mix well. Then add the water.
Step 2. Mix with a wood spoon or by hand until all ingredients are well incorporated. Do not knead.
Step 3. Transfer to another bowl that you covered with olive oil. Cover with plastic wrap and a towel. Let the dough rise for a minimum of 12 hours at room temperature (mine rested for 24 hours).

Step 4. Transfer the dough to a well floured work surface and shape it round. Cover again with a towel and let rise for 30 minutes to 1 hour until it doubles in size.
Step 5. In the meanwhile, preheat the oven at 500 degrees F. Place an oven-safe pot including the lid in the oven for at least 30 minutes. I used a Le Creuset 18 (2 qt) and replaced the lid nob with an oven-proof stainless steel one that I purchased here (but you can use a stainless steel oven proof pot as well).
Step 6. Bake the bread with the lid on for 30 minutes. Remove the lid and bake for another 15-20 minutes until the top is golden.
Step 7. Devour! I guarantee that you will!

Thanks for another great idea. .. question, does the water that you use in the beginning need to be warm?
ReplyDeleteYou're welcome. Not warm, just regular, room temperature water. That's the beauty of this recipe, just mix everything together and let rise for 12 or 12 + hrs at room temperature.
