We made ice cream for New Years Eve and had a couple egg whites left over. I don't like throwing away food, so I decided to whip up some meringue cookies, which are pretty much egg whites + sugar. I used two recipes as guidance (this & this) and this is the end result:
Ingredients:
4 egg whites
1 cup sugar
1/2 teaspoon vinegar
1 teaspoon vanilla extract (optional)
Food coloring (optional)
1. Preheat the oven to 350 degrees F (180 C).
2. Mix the egg whites in the stand mixer until they are fluffy. Then start adding the sugar and vanilla gradually.
4. Using a piping bag and piping tip, pipe the mixture onto a parchment-paper lined baking sheet. Alternative: using two tablespoons, push the mixture from one tablespoon with the back of the other tablespoon onto the baking sheet.
5. Turn oven off. Place the baking sheet in the oven, and let the cookies bake for at least 2 hours, undisturbed, until they are dry and crunchy.
