Saturday Morning Flourless Pancakes

I woke up this glorious Saturday morning craving pancakes.  So I made some.

I found this healthy & flourless recipe, but made a couple changes.  I only used 3 eggs (instead of 6), 1/2 cup of shredded coconut (instead of 1), and used strawberries instead of blueberries because I didn't have any blueberries in the house.

It is a quick recipe to make and it is delicious!  Highly recommend.

Chocolate Zucchini Orange Cake

I fell in love with baking when I was a child, helping out my grandma.  That love continues today--I cannot think of an activity I enjoy more than baking.  Plus Andrew and I love devouring eating sweets!

I had too many zucchinis in my fridge, so I decided to make this super flavorful and easy to make zucchini chocolate orange cake.  I used this recipe as a guide, but added my own spin to it.  I do not like using baking soda and/or salt in my baking.  My mother and grandmother never used those two ingredients for baking, so I don't either.  I also left out the glaze and saved some calories, and opted to sprinkle some orange zest on top instead.

The whole house smelled divine, like rich chocolate and fresh orange zest.

Jordi's Playground - Bernal Heights Neighborhood
